Cooking Class in a Hut
A convivial experience for the group of Swiss cyclists
July 2024 in the Dolomites

On a bright sunny day, the group of Swiss bikers led by Inge reached the hut, unaware of the surprise that awaited them. On the terrace, with the Dolomites as a backdrop, a Cooking Class awaited them, designed to immerse them in the authentic flavors of the mountains.
After a toast with local bubbles and appetizers, including dandelion capers, porcini mushrooms in oil, and goat cheese flavored with mountain herbs, we began cooking together. The choice of dishes was a tribute to tradition: speck dumplings cooked in broth, served hot and sprinkled with parmesan and brown butter, accompanied by sauerkraut seasoned in the Ladin style. To finish on a sweet note, we prepared the Kaiserschmarren, soft and fluffy, paired with an intensely flavored cranberry jam.
The atmosphere of conviviality was palpable: laughter, stories and shared gestures made this experience even more special. And before saying goodbye, I wanted to add a final mountain touch with a taste of my mountain pine grappa, perfect for sealing a lunch that will remain in the memories of each of us.
