When I write the menu I consider aspects like these:

  • Characteristics and traditions of the place where I am.

    (The common thread with the earth)

  • Seasonality, freshness and availability of raw materials.

    (Fresher = Healthier)

  • Balance proteins, carbohydrates, fats, vitamins, minerals, macro and micronutrients as much as possible.

    (Food should give you energy, not take it away)

  • Follow a correct order of food intake.

    (Aiding digestion and not feeling bloated and heavy)

  • Use cooking techniques and methods that preserve the integrity of food.

    (Otherwise, there is nothing left of the freshness)

Your personalized menu

We will customize your request/menu together (e.g. Ladin, Mediterranean, creative, picnic, bbq, vegetarian, vegan cuisine, etc.) taking into account any intolerances.
If you have a particular dish in mind or are unsure about the desired menu, I will work with you to create an ad hoc one.

I’ll review it to make it somewhat consistent with:

  • balance of proteins, carbohydrates, fats, vitamins, minerals
  • respecting the correct order of food intake
  • freshness, seasonality and availability of raw materials

Like in a restaurant

I will organize the meal as in a quality restaurant, in the comfort of your home or wherever you think is appropriate.

I will take care of everything; I will buy ingredients, I will prepare the meal in your kitchen using techniques and cooking methods that preserve the integrity of the food, I will perform the table service describing the dishes and then I will tidy up the kitchen before leaving.

If you wish, I can guarantee the intervention of professional sommeliers, barmen and maitre de maison, to make the service even more elegant, serious and refined.
