The signature dish of Chef Davide Crazzolara for the Maratona dles Dolomites

On the occasion of the recent Maratona dles Dolomites – Enel, the “Cyclist’s Dish – Reinvented Canederli” was presented, the result of a collaboration between local chef Davide Crazzolara and nutritionist Elena Casiraghi.
Traditional canederli are reimagined using local ingredients and sustainable methods. The inspiration comes from the fusion of local cuisine and sports nutrition: no waste, authentic ingredients, and a celebration of the region.
The dish embodies the values of sustainability, physical recovery, and local identity, perfectly aligned with the spirit of the Maratona dles Dolomites – Enel, an international event that attracts cyclists from over 70 countries. Held annually at high altitude, the race unfolds across three routes—138 km, 106 km, and 55 km—through the most iconic Dolomite mountain passes, all closed to traffic for the occasion.
This dish is a perfect example of a culinary offering that combines creative cuisine, nutritional value, local flavor, and environmental awareness. It embodies a philosophy of cooking that focuses on authentic ingredients, sustainable practices, and care for people’s well-being.
